Beaches and Cream Soda Shop

IMG_1266If you’re looking for one of the best burgers in town or just hungry for some yummy dessert…Beaches & Cream Soda Shop is the place you’ll want to go!  Beaches & Cream Soda Shop is located at Disney’s Beach Club Resort, along side of Stormalong Bay.  It’s a short walk from The Boardwalk or if you happen to be at Epcot in the World Showcase area, you an take a quick walk or boat ride from the exit between France & the United Kingdom.

Beaches & Cream Soda Shop is adorned in a pastel color palette .  It reminds me of the colors you see if you buy a bag of saltwater taffy.  You’ll definitely want to grab a seat early on in the day if you can, as it is a very small place.  It has three booths adorned with beach balls, a handful of white wrought iron tables & then you have a counter running along two wall with plenty of seating there as well.  Of course, there is a juke box right when you walk in as well.  They also have a few tables outside on the sidewalk overlooking Stormalong Bay, if you prefer to sit outside.  The tables are adorable and look like ice cream cones.




The day I went with my parents, we were lucky and didn’t have to wait more than 5 minutes to be seated at one of the tables inside.  We took awhile to look over the menu, but we were all hungry for a good burger, so that’s what we all ordered.  Honestly, it’s one of the best burgers I’ve had since moving to Florida.  If I wasn’t so hungry for a burger that day, they had the most amazing looking grilled cheese sandwich served along side a cup of tomato soup.  I’ll definitely be getting that next time!  They also have hotdogs, chili, & a few other sandwiches to choose from.


When it was time for dessert, none of us were still that hungry, but it all looked so good as we see order after order of ice cream and shakes being delivered to other tables.  My dad loves a good Chocolate Malt, so that’s what he ordered.  Keep in mind, if you order one of the shakes/malts…they serve it up the old fashioned soda shop style way.  They fill up a big glass with the shake or malt and then give you the remainder of what is left in the tin cup it was made in, which is another big cups worth, so you may want to share!  As for my mom and I, we decided to split the strawberry shortcake with fresh strawberries, which was topped with a huge scoop of vanilla bean ice cream and a big ‘ol dollop of whipped cream with colored sprinkles.  It was delicious!


So don’t forget about this little hidden secret next time you are out visiting The Boardwalk or lolly gagging around Epcot and you’re hungry for some tasty treats!  All of the prices are really reasonable too!  Oh, and if you or your family are big fans of ice cream, you may want to order up one of there most known for deserts….The Kitchen Sink!  If you’re able to tackle that beast…congratulations!  It is eight giant scoops of ice cream smothered in about every topping imaginable!


Hello, Spaghetti Squash! Goodbye, Pasta!

Spaghetti squash, in one word…Amazing!  I bet you’ve seen it in your produce section while grocery shopping & wondered…how do you even cook that stuff.  I know I did at first!  Thank goodness for the internet & a quick google search!  I first started cooking spaghetti squash several years ago, but for some reason I haven’t picked any up for a year or so.  Anyways, I was at the grocery store this past weekend & noticed that they had some nice small sized spaghetti squash, which was perfect, since I was only cooking it for myself.  They come in all sizes, so you can pick one up that will suffice for however many people you’re cooking for.

IMG_1590There are several different ways you can cook up your spaghetti sauce, so just go with whatever way is best for you.  I’ve baked it in the oven and used the microwave both and it comes out the same either way you cook it.  So, if you’re going to go the microwave route, like I do, you’ll want to poke it several times with a sharp nice all over!  This is a very important step, otherwise, your squash may explode & nobody wants to clean up the microwave after that mess!

IMG_1591Once you have poked your spaghetti squash all over, so it can vent while cooking, you’ll want to place it on top of two paper towels in your microwave & cook it for 10-12 minutes.  While that’s cooking, you can prepare whatever else you want to have with it.  I had picked up some chicken meatballs & had them baking in the over for 25 minutes, while I was doing everything else.  Next, I put some spaghetti sauce on the stove to heat up.  Then I thought some mushrooms cooked in a little garlic would be a good addition, so I got that started up on the stove.

IMG_1595Once the microwave goes off, you’ll want to get your squash out of the microwave.  Be careful, it’ll be steaming hot!  You can let it set for 5 minutes or so, if you like.  When you’re ready, you’ll want to use a sharp knife and cut it in half length wise.

IMG_1597Next, you’ll want to take a big spoon and scoop out all of the seeds in the middle.  It should only take you a couple of scoops & it comes out super easy.

IMG_1599Once you’re done scooping out the seeds….it’s time for the fun part!  Get yourself a fork and just start scraping from the sides, towards the center and you’ll quickly see why they call it spaghetti squash!  Just scrape until you’ve got it all out of the shell and put it in a bowl!



IMG_1602See!  It looks just like spaghetti, only this is super healthy & very filling!  Just an FYI for those Weight Watchers people out there…this stuff is ZERO points, so eat up!  So once you’re all bowled up, add whatever toppings you’d like!  I chose chicken meatballs, mushrooms & spaghetti sauce & topped it all off with a little parmesan cheese!

Goulash – It’s What’s For Dinner!

I don’t know about you, but I have a few comfort foods from my childhood that standout in my mind & my mom’s goulash is one of my favorites!  What’s even better…it’s one of the easiest meals there is and you can throw it all together within 20 minutes!  First off, I’ll start you off with the ingredients, so you can pick them up if you don’t happen to have them all on hand, but most likely you will. Even better, right?!

  • 1lb box of pasta (whatever shape and kind that you like)
  • 1lb of lean ground beef
  • Salt & Pepper to taste
  • Dried Minced Onion or the real stuff if you prefer
  • 2 cans of tomato paste
  • Ketchup
  • BBQ Sauce

Alright, what you’ll want to do first is get yourself a big pasta pot full of water & then throw in a good amount of salt to get that water boiling faster and to flavor the pasta.  Don’t be shy on the salt…the majority of it will be going down the drain when you drain your pasta!

IMG_1551Next, you’ll want to get your your ground beef and break it all up in a skillet to brown.  While it is browning, put in a bit of salt and pepper to your liking, as well as a few sprinkles of dried minced onion for some good flavor.  Once your meat is all browned up and cooked through, you can drain off any excess grease if any and then you can set it aside.

IMG_1550Now, once your pasta is all good to go, get out a strainer and drain all of the water off the pasta.  You can let it sit in the strainer for a few minutes while you prepare the next step.

Next, you’ll want to open up your two cans of tomato paste and scoop both cans into the pot that you were just cooking the pasta in.  Once those cans are empty, fill them up with water and add to the pot.  You’ll probably want to use 3 to 4 cans of water depending on how thick or thin you want the sauce.  You’ll want to stir this on low to medium heat until it’s all nice and smooth and blended together.

IMG_1552Once the sauce is all ready, you can then stir in meat and the pasta and stir it all together really good.  Next, you’ll want to squirt in a good amount of ketchup & BBQ sauce.  Just keep stirring and tasting and adding in a little more of what ever flavor you prefer.  I prefer a little more BBQ sauce myself, but everyones tastes are different.

Super Simple Crockpot Chicken & Stuffing

OMG guys!  I pinned this recipe the other day while browsing Pinterest & now I’m so glad I did!  In one word….AMAZEBALLS!!!  This is the best AND easiest crockpot recipe I’ve ever made!  So, if you want to enjoy the first day of the new year & don’t feel like cooking, but still would like to woo your family with a delicious dinner…this recipe is for you!  Great thing is…it’s only 4 ingredients and you may already have them on hand!



  • 4 Chicken Breasts (Thawed)
  •  1 Box of Stove Top Stuffing Mix
  •  1/2 cup of Sour Cream
  • 1 can of Cream of Chicken Soup
  • 1/4 c. water

The first thing you’ll want to do is place all four chicken breasts in the bottom of your crockpot.

IMG_1112Next, you’ll want to open up your box of stuffing mix and just dump it in the crockpot, right over the top of the chicken.

IMG_1113Step 3…mix your cream of chicken soup, 1/2 cup of sour cream & 1/4 cup of water in a bowl and simply dump it over the top!

IMG_1114Now all you have to do is put the lid on that puppy, set it to low and wait for four hours!  Super simple, right?!

Four hours later….

IMG_1119This was so freaking tender & moist!  You could just cut the chicken up with your fork.  Like I said…it was amazeballs!  Try it…you won’t regret it!  It’ll be a hit with the family & it’ll be one of those easy go to meals when you just want to throw something in the crockpot and go about your day without slaving over a hot stove & getting tons of dishes dirty!

Blueberry Banana Bread

I hope everyone had a great holiday weekend!  It was nice to have a three day weekend!  I didn’t do much, but I did manage to bake a loaf of Blueberry Banana Bread since I had some super ripe bananas that weren’t going to get eaten.  I’ve never made banana bread with blueberries, but figured, how can you go wrong by adding blueberries, as they are delicious!  This is the best banana bread recipe ever because it’s my mom’s and she makes the best.  Mine never looks or tastes as good as hers, but it’s still good.  I’ll put the original recipe below…the only thing I did different was I used whole wheat flour and added blueberries.


Blueberry Banana Bread

  • 2 cups flour
  • 1 tsp. baking soda
  • 1/4 to 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 3 large bananas
  • 1 cup blueberries (leave out if you just want plain banana bread)
*Cream butter and sugar together in a bowl.  Add eggs.  Stir in mashed bananas and vanilla.  Blend in dry ingredients.  Pour into greased loaf pan.  Bake in oven at 350 degrees for 55-60 minutes.  Time may vary depending on oven.

Brie & Grape Quesadilla

As I was getting ready this morning, I had the t.v. on and a show was on called, “Food for Thought” & the host was cooking up a Mexican inspired spread.  Since I was getting ready to run to the grocery store, I thought I’d pick up the ingredients for a super simple snack.  All you need is some tortillas, brie & grapes..see…told you it was easy!

Just slice up your brie in thin slices and place randomly on a tortilla.  Then slice 5 or so grapes in half and place on the tortilla with the brie and then throw a little more brie on top.  Just make sure not to over do it on the brie because it likes to melt!  So if you put too much, you’ll have it all over your skillet.  Next, just put another tortilla on top and then let it cook until golden brown on the bottom and then flip and do the same thing.  When done, slice it up in four pieces and enjoy!

I would have never thought to try this combination of ingredients, but it was pretty darn good!  You’ve got that melted creamy buttery cheese with the sweetness of the grapes…it actually pairs quite nicely.  Try it out and let me know what you think!

Yummy Baked Cauliflower!

I was searching for new and interesting veggie recipes and ideas last week, as I was growing bored of just plain old veggies.  Then when I was searching I came across the most fabulous recipe for baked cauliflower…yes, I said BAKED!

All you have to do is steam a whole head of cauliflower in some chicken broth to infused a good flavor and to cook it up so it’s pretty tender.  I’d say to let it steam in a pot for about 20 minutes.

In the meantime, go ahead and preheat your oven to 375 degrees F.  Then in a medium bowl, mix together 1/2 cup of seasoned bread crumbs, 2 tbsp grated Parmesan cheese, 1/8 tsp garlic powder, 1/8 tsp salt & whatever other seasoning you’d like to add to the concoction.  In a small microwavable bowl, melt 1/4 cup of butter.

After your cauliflower has steamed for the 20 minutes and it’s tender when you poke it with a fork, you’ll want to move it from the pot to a baking sheet.  I usually put down a piece of parchment paper on the cookie sheet for easy clean up and so nothing sticks to my pan.  Anyways, once you have the head of cauliflower on the cookie sheet, go ahead and take a cooking brush and brush your melted but all over the cauliflower.  When you’ve got that all done, you’ll want to sprinkle or pat on the bread crumb mixture all over the head of cauliflower.  It should stick to the melted butter.  Once covered to your liking…pop that sucker in the oven for 15-20 minutes or until golden brown.  When all is said and done, you’ll take something that looks like this out of the oven…

Yes, it was delicious!  So good in fact…that was my dinner for the night!  Can’t wait to make this yummy goodness again!  It’s an awesome way to put a new spin on your plan old cauliflower!  I would have never thought to bake it until I came across this recipe & I’m sure glad I did!  I hope you try it if you haven’t….you’ll love it…pinky swear!

Inspiration Workshop – Favorite Recipes

 It’s been far too many weeks since I’ve linked up with Gussy Sews Inspiration Workshop, so I thought I’d jump back on board for this weeks prompt, which is Favorite Recipe.  It’s hard to pick just one, so I’ll list a couple of my favorites for you.  The first recipe list is my very favorite & is always a hit with anyone who tries it.  Serve it up with some mashed potatoes and veggies….oh, so good!  Enjoy!

Ham Balls

* 1 lb ham
* 1 lb hamburger
* 1 Cup dry bread crumbs
* 1/2 Cup Milk
* 1 Egg

* 1/2 Cup water
* 1/2 Cup vinegar
* 3/4 Cup brown sugar
* 3/4 tsp yellow mustard

Mix together ham, hamburger, bread crumbs, milk, & eggs. Form into balls. Pour sauce over ham balls. Cover & bake 60 to 70 minutes @ 325°.*Can also be formed as a loaf*

Cheesy Chicken & Broccoli Casserole
*2 cups cooked chicken
*2 cups cooked rice
*1 pkg broccoli cooked
*1 T minced onion
*2 cans mushroom soup
*1 soup can of milk
*½ lb Velvetta cheese (grated)

Mix all together & bake @ 350 degrees for about 45 minutes or until hot and bubbly.  **Note: The rice & chicken are approximate.  I usually boil a whole chicken & use the meat from that…you may need more milk as well.

*1 egg

*1 stick of butter (melted)
*1 can corn
*1 can cream corn
*1 box jiffy mix
*1 cup sour cream

Mix all together, pour into an 8×8 & bake at 350 degrees for 30-45 minutes
